Ingredients
500 gm firm tofu
10 shells of butter lettuce or regular lettuce
1 finely chopped red Onion
Green onions chopped – 2 tbsp
Garlic – 4-5 cloves finely chopped
Hoisin sauce – 4-5 tbsp
Dark soya sauce - 3 tbsp
For the Mango salsa:
1 ripe mango finely chopped
1 tomato finely chopped
Juice of 1 lemon
Fresh coriander – 1 tbsp
Salt and pepper
Steps:
« Wrap the tofu in a tea towel and put a weight on it to remove all excess water
« Cut the tofu into 1-inch-long rectangles and marinade in the dark soya sauce and keep aside
« In a thick bottom pan, pour the evoo and Sautee the red onions and the garlic. Add the hoisin sauce and stir in the tofu. Cook till the tofu is well coated in the sauce and the edges turn crispy
« Put together the salsa now combining all the ingredients.
« Spread the lettuce cups and fill them in with the cooled tofu. Sprinkle the green onion on top
« Serve with the salsa
