Roasted Cauliflower with Peas

This recipe is especially designed for all you new cooks who don't enjoy cooking but have to do it for a living (like me  ). With minimum ingredients and less cook time, here is one such recipe that can impress anyone and leave them satiating for more. That to without breaking your back in the kitchen the entire day.Loaded with Vitamin C and Vitamin K, cauliflower is a superfood most of us enjoy eating. Now without wasting much time, lets get straight to the recipe.

 Ingredients:  

  1. 1 Kg cauliflower

  2. 250 gms Peas (fresh or frozen)

 For the marinade:

- 1 1/2 tbsp. OLIVE OIL

- 1 tsp dried anardana (dried pomegranate) powder

- 1/2 tsp. cayenne pepper

- 1/2 tsp. dried coriander powder

- 1/2 tsp. cumin powder

- 1/2 tsp. red chilli flakes

- 1/2 tsp sea salt

- 1 tsp. fresh mint leaves, chopped

- 1 tsp. parsley, chopped

 Directions:

  1.     Boil and drain peas till they get soft.

  2.     Blanch whole cauliflower for 12 to 15 mins and keep aside to cool down.

  3.     Now for the marinade, add Olive Oil, dried anardana powder, cayenne pepper powder, coriander  powder, cumin powder, chilli flakes, sea salt, mint leaves, parsley in a large bowl, and mix well .

  4.     Then take the whole cauliflower and brush the prepared  marinade all over the cauliflower evenly.

  5.     In a baking tray place the cauliflower and put boiled pea's around it.

  6.     In parallel, pre-heat the oven at 200 degree and then roast the cauliflower for 10-12 mins.

  7.     Garnish the cauliflower with coriander leaves / mint leaves and serve hot with a yummy dip. (See below for my recipe of a mouth watering Yogurt dip) 

Yogurt Dip (Optional)


Ingredients:

  1.     3/4 cup greek yogurt

  2.     1 tbsp. lemon juice or apple sider vinegar

  3.     Sea salt as per taste

  4.     1/2 tsp cayenne pepper

  5.     1/2 tsp black pepper

  6.     1 tbsp Chopped Garlic

  7.     1 tbsp Chopped Onion

Directions: 

  1.  In a large bowl add all the above ingredients and mix them well.

  2. Now transfer the dip to the serving bowl.
