White bean and red grape salad

Don’t ever lose your ability to make magic, even in day to day life. After all a little magic goes a long way, especially when it comes to the mundane everyday routine life or meal in this case.

Add a little magic to your weeknight meal with this moorish, quick and easy salad. White bean and Red grape salad. 

Ingredients 

One tin of cannellini beans (400gms)

125 gms of red grapes (cut in halves)

25 gms of dill (finely chopped)

Juice of half a lemon

75 gms of goats cheese or danish feta

Two tablespoons of extra virgin olive oil

Salt to season 

1. Rinse the cannellini beans and add to a serving bowl.
2. Now add grapes, dill and lemon juice. Mix well.
3. Then add dill, olive oil and goats cheese (save some for the garnish). Mix well. 
4. Serve cold, as a side and enjoy with a piece of grilled fish, chicken or roast vegetables
